Crispy Baked Smashed Blue Potatoes


I began harvesting potatoes! This is one of my families favorite recipes. Hope you enjoy as much as we do!


What you will need:

Blue Potatoes

Unsalted butter

Olive oil

Salt & Pepper

Scallions/Chives


  1. Place potatoes in a pot and top with 2 inches of water. Bring to a boil, then reduce the heat to a simmer until continue cooking until potatoes are soft. About 20-25 minutes depending on size.

  2. Drain potatoes over a strainer and set aside until there is no more steam from the potatoes. About 5 minutes.

  3. Preheat oven to 180 Celsius (350 Fahrenheit).

  4. Arrange potatoes on a baking sheet. Smash each potato with a fork, brush with melted butter, drizle with olive oil (~ 1/4 teaspoon per potato), and sprinkle with salt and pepper.

  5. Bake/roast for 40-45 minutes until the skin is crispy. Do not flip during baking.

  6. Remove baked potatoes from oven, serve hot sprinkle with your choice of garnish.


<TLDR>

(1) Boil potatoes until soft

(2) Drain until dry and no more steam

(3) Arrange potatoes on a baking sheet and smashed with a fork

(4) Brush each potato with melted butter, drizzle with olive oil, and sprinkle with salt and pepper. bake
